Juicy turkey mushroom meatloaf

This recipe is based on Ina Garten’s classic meatloaf. I needed a quick and easy dish for random guests, and I knew I had some chopped turkey meat. Once I began my prep I found that i did not have the exact ingredients needed. Deliciousness ensued…..

Ingredients

  • 1 Tbsp. olive oil
  • 3 yellow onions, chopped (approx. 3 cups)
  • 1 tsp. fresh thyme leaves, chopped (or 1/2 tsp dried)
  • 2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 3 tbsp. Worcestershire sauce
  • 1/3 cup chicken stock or broth
  • 1 tbsp. tomato paste
  • 1 lb. ground turkey
  • 1 lb. spicy turkey sausage – remove from casing.
  • 1 lb mushrooms (white or whatever your favorites are).
  • 2 extra-large eggs, beaten
  • 1/4 cup marinara (tradtionally ketchup, but I can not).
  • 1/2 cup plain breadcrumbs

Directions

  1. Preheat oven to 325° F.
  2. Line a baking sheet with parchment paper.
  3. Heat the olive oil in a medium span. Add the onions, thyme, salt, and pepper and cook over medium heat, stirring occasionally, for 8-10 minutes, until the onions are translucent but not brown. Take the mixture off the heat, add the Worcestershire sauce, chicken stock, and tomato paste and mix. Allow to cool slightly.
  4. Remove the spicy turkey sausage from it’s casing.
  5. Chop the mushrooms up (medium/fine).
  6. In a large bowl, combine the ground turkey, ground spicy sausage meat, onion mixture, mushrooms, breadcrumbs and eggs; mix with your hands (or a fork, but hey I use my hands). Shape the mixture into a rectangular loaf and place on the baking pan. Spread the marinara on the top.
  7. Bake for approximately 1 hour,Check at 45 minutes and continue baking until internal temperature is 160° F. and the loaf is cooked through.
